Title: Dirty Spaghetti

5 Dried mushrooms (ordinary
-Agaricus)
1/2 ts Onion powder
1/2 ts Garlic powder
1/4 ts Celery salt
1/8 ts Salt substitute
1 ds Cayenne
2 ts Stock base
2 oz Water
1 oz Olive oil
Cooked vermicelli; for 1
-serving
This is a version of something I occasionally make with mostly fresh
ingredients. But when the cupboard is bare, it's bare. The only
invariant is that for this dish the mushrooms must be dried, for the
proper effect (drying makes ordinary mushrooms taste better anyhow).
Crush the dried mushrooms almost to a powder. Any remaining fragments
should be quite small. Combine all ingredients (except the pasta) and
bring to the boil. When all liquid is boiled away, stir-fry 1 or 2
minutes; toss with cooked pasta.
This looks like a spaghetti version of dirty rice.
I actually tried it with the ingredients as above, as I had no fresh
things on hand, and it made a surprisingly good sauce. If I'd had any
on hand, or it weren't raining so hard, I might have gone to the
store and gotten an ounce of sausage meat or various and sundried
tomatoes to put in; but even as it was, it was so tasty I went around
the kitchen singing (to the tune of a Smokey song we used to play)
"ooooh, mommy, mommy."
