     Title: Vegetable Stroganoff

     Yield: 6 Servings

MMMMM---------------------------SAUCE--------------------------------
     3 c  Sour cream
 1 1/2 c  Yogurt
     3 tb Dry; red wine
     1 c  Onion; chopped
   1/2 lb Mushrooms; chopped
   3/4 ts Salt
   3/4 ts Dill
     1 ds Tamari
          Paprika
          Black pepper
     2 tb Butter

MMMMM-------------------------VEGETABLES------------------------------
     6 c  Fresh vegetables; chopped;
          -(broccoli, celery, cabbage,
          -carrots, cauliflower,
          -cherry tomatoes, peppers,
          -zucchini)

MMMMM---------------------------PASTA--------------------------------
     4 c  Egg noodles; dry

MMMMM--------------------------GARNISH-------------------------------
          Scallions; freshly minced

 Preparation time: 1 hour

 Sour cream & wine sauce over vegetables over noodles.

 The Sauce:

 Saute onions and mushrooms in butter until onions are soft. Combine
 all ingredients in th top of a double boiler and heat gently about 30
 minutes.

 The Vegetables:

 While the sauce simmers, steam 6 cups chopped, fresh vegetables.

 The Pasta:

 Cook 4 cups raw egg noodles in boiling, salted water until tender.
 Drain and butter.

 Assemble the stroganoff on a platter and garnish with freshly-minced
 scallions.
