MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Lemon Ricotta Pasta

     Yield: 6 servings

    12 oz Uncooked spaghetti
     1 c  Whole-milk ricotta cheese
   1/4 c  Grated Parmesan cheese
     1 tb Olive oil
     2 ts Grated lemon zest
   1/2 ts Salt
   1/4 ts Pepper
          Chopped fresh parsley

 Cook spaghetti according to package directions.

 In a small bowl, whisk ricotta, Parmesan, oil, lemon
 zest, salt and pepper. Drain spaghetti, reserving 1/2
 cup cooking liquid. Whisk the reserved 1/2 cup cooking
 liquid into ricotta mixture.

 Return drained pasta to pan. Add ricotta mixture and
 toss to coat. Cook and stir over low heat or until
 heated through. Sprinkle with parsley and additional
 lemon zest.
