MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Perfect Pesto Pasta

     Yield: 6 servings

     1 c  Olive oil; divided
     4 c  Chopped fresh kale
   1/4 c  Pine nuts; toasted
     4 cl Garlic
     1 oz Pkg fresh basil
   1/2 c  Grated Parmesan cheese;
          - extra for sprinkling
     1 ts Salt
   1/2 ts Black pepper
     1 tb Lemon juice
    16 oz Rigatoni pasta
     2 c  Cherry tomatoes; halved

 In a large skillet over medium heat, heat 1 tablespoon
 oil. Add kale and cook 4 to 5 minutes, or until wilted.

 Place kale in food processor, add remaining oil, the
 pine nuts, garlic, basil, 1/2 cup Parmesan cheese, the
 salt, pepper, and lemon juice. Process until smooth.

 Cook pasta according to package directions, drain, and
 place in a large bowl. Add kale pesto and tomatoes to
 pasta, and toss gently until evenly coated. Sprinkle
 with extra Parmesan cheese and serve.
