     Title: Red Snapper Vera Cruz

     Yield: 6 Servings

     1 md Onion; chopped
     1    Green pepper; seeded,
          - chopped
     1    Stalk celery; chopped
     1    Carrot; chopped
     2 tb Vegetable oil
    16 oz Can Italian plum tomatoes
   1/4 c  Lemon or lime juice
     1 cl Garlic; mashed
   1/2 ts Ground cumin
   1/2 ts Oregano
     2 tb Cilantro or parsely;
          - finely chopped
     2 ts Salt (optional)
     1 ds Freshly ground black pepper
     2 lb Red snapper fillets
    10    Green olives; pitted, halved
     4 oz Small shrimp; rinsed in
          - cold water and drained

 Slowly saute onion, green pepper, celery, and carrot in oil until
 tender but not browned. Add tomatoes, lemon juice, garlic, cumin,
 oregano, cilantro, salt, and pepper.

 Carefully place fish filets in sauce, cover pan, and simmer gently
 until fish is just done about 10 minutes. Add the olives and shrimp
 to the sauce and heat through. Serve with rice.
