MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Caribbean Shrimp Bowl

     Yield: 4 servings

     2 tb Oil; divided
     1 lb Uncooked (U-30) shrimp;
          - peeled, deveined
     2 c  Frozen riced cauliflower
    12 oz Bag broccoli coleslaw mix
     1 lg Red bell pepper; chopped
     1 md Onion; chopped
     1 tb Adobo seasoning
   1/4 ts Pepper
   1/2 ts Crushed red pepper flakes
   1/8 ts Sea salt
     1 c  Diced fresh pineapple or
          - unsweetened pineapple
          - chunks; drained
     1 c  Mango; peeled & chopped
   1/4 c  Fresh cilantro; minced

 In a large skillet, heat 1 tb oil over medium-high heat. Add
 shrimp; cook and stir until shrimp turn pink, 3-4 minutes. Remove
 and keep warm.

 In the same skillet, heat remaining 1 tb oil. Add cauliflower rice,
 broccoli slaw, red pepper, onion, adobo, pepper, pepper flakes, and
 salt. Cook, covered, over medium heat until vegetables are
 crisp-tender, 8-10 minutes. Add pineapple, mango, cilantro, and
 shrimp; heat through. Serve with additional cilantro if desired.
