     Title: Smoked Sausage Dinner

     Yield: 2 Servings

   1/2 lb Smoked sausage; sliced
   1/3 c  Bell pepper; chopped
   1/4 c  Onion; chopped
   1/2 ts Dried oregano
   1/2 ts Dried basil
     1 tb Olive oil
     1 cl Garlic; minced
   3/4 c  V8 juice
 1 1/2 c  Cooked rice; hot
          Fresh oregano; minced
          - (optional)

 In a large skillet, saute the sausage, green pepper, onion,
 oregano, and basil in oil until vegetables are crisp-tender. Add
 garlic; cook 1 minute longer.

 Stir in V8 juice; bring to a boil. Reduce heat; simmer, uncovered,
 until thickened and heated through, 7 to 8 minutes, stirring
 occasionally. Serve with rice. If desired, garnish with fresh
 oregano.
