MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Roasted Kielbasa & Vegetables

     Yield: 6 servings

     3 md Sweet potatoes; peeled, in
          - 1" pieces
     1 lg Sweet onion; peeled, in 1"
          - pieces
     4 md Carrots; peeled, in 1"
          - pieces
     2 tb Olive oil
     1 lb Smoked kielbasa/Polish
          - sausage; halved longtway,
          - peeled, in 1" pieces
     1 md Yellow summer squash; in 1"
          - pieces
     1 md Zucchini; in 1" pieces
   1/4 ts Salt
   1/4 ts Pepper
          Dijon mustard (optional)

 Set oven @ 400 F/205 C.

 Divide sweet potatoes, onion and carrots between 2 greased 15x10x1"
 baking pans. Drizzle with oil; toss to coat. Roast 25 minutes,
 stirring occasionally.

 Add kielbasa, squash and zucchini to pans; sprinkle with salt and
 pepper. Roast until vegetables are tender, 15-20 minutes longer.
 Transfer to a serving bowl; toss to combine. If desired, serve with
 mustard.
