Melt 2 tb butter in sauce pan. Saute mushrooms until brown. Add
brandy.
Flambe with match. Spread 1 oz of cheese in each chicken breast and
cooked mushrooms. Roll up the breast and place seam side down. Pat
each with butter. Set aside.
Melt 1/4 cup of butter. Using 2 sheets of phyllo for each, place
chicken on phyllo brushed with butter 2-3" from the end of dough and
roll dough folding in sides. Brush with butter. Place chicken on
greased cookie sheet. Bake 350 F 40-45 minutes.
Sauce:
Melt butter, add flour stir until slightly browned, remove from heat.
Slowly add brandy. Slowly add broth. Return to stove and heat until
thickened. Add parsley and chives, season to taste.
