2 Cornish game hens;
-cut in halves
1 Onion; chopped
2 c Cooked rice
1/2 c Celery; diced
1 ts Salt
1/8 ts Pepper
8 oz Can mushroom pieces
Salt hens, both sides. Mix celery, onions, mushrooms, and rice
together. Heap rice in 4 mounds in a baking dish. Place 1/2 hen,
skin side up, over each mound. Cover with foil. Bake at 350 F
for 1 hour. Remove foil. Bake until browned.
