MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Sunshine Chicken

     Yield: 6 servings

     2 ts Curry powder; up to 2 tb, or to taste
 1 1/4 ts Salt; divided
   1/4 ts Pepper
     6    Chicken breast halves,
          - boned, skinned (5 oz ea)
 1 1/2 c  Orange juice
     1 c  Uncooked long grain rice
   3/4 c  Water
     1 tb Brown sugar
     1 ts Ground mustard -OR-
     1 tb Prepared mustard
          Fresh parsley; chopped

 Combine curry powder, 1/2 ts salt and the pepper; rub over both
 sides of chicken. In a skillet, combine orange juice, rice, water,
 brown sugar, mustard, and remaining salt. Add chicken pieces; bring
 to a boil. Reduce heat; cover and simmer until chicken juices run
 clear, 20-25 minutes.

 Remove from the heat and let stand, covered, until all liquid is
 absorbed, about 5 minutes. Sprinkle with parsley.
