MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Easy Chicken & Potatoes

     Yield: 4 Servings

 1 1/2 lb Bone-in chicken thighs (4)
   3/4 ts Salt; divided
   1/4 ts Pepper; +1/8 ts, divided
     2 tb Olive oil; divided
     1 lb Red potatoes; in 1/2" cubes
     4 md Carrots; sliced
     1 md Onion; chopped
     3 cl Garlic; minced
     1 ts Dried rosemary; crushed

 St oven @ 350 F/175 C.

 Sprinkle chicken with 1/2 ts salt and 1/4 ts pepper. In an
 ovenproof Dutch oven, heat 1 tb oil over medium-high heat. Brown
 chicken on both sides. Remove chicken from pan; discard drippings.

 In same pan, combine potatoes, carrots, onion, garlic, rosemary,
 and remaining oil, salt and pepper; return chicken to pan.

 Bake, covered, 35 to 40 minutes or until a thermometer inserted in
 chicken reads 170 to 175 F and vegetables are tender.
