                         Stuffed Chicken Rolls

  3                    Chicken breasts
  6                    Prosciutto or ham -- thinly sliced
  6                    Low fat swiss cheese -- thinly sliced
                       Flour -- to coat chicken
    1/2  lb            Fresh mushrooms -- sliced
    1/2  c             Chicken stock
    1/2  c             White wine or Marsala wine
    1/4  ts            Ground rosemary
    1/4  c             Parmesan cheese -- grated
  2      tb            Corn starch
  1      ts            Kitchen bouquet
                       Salt and pepper -- to taste
  1      ts            Sugar (optional)

Skin and bone chicken breasts and cut in half. Place chicken pieces
between 2 pieces of waxed paper and pound until slightly flattened.
Place 1 slice prosciutto and 1 slice of cheese on each breast and
roll up. Secure with a toothpick and roll in flour.

Notes:

This is a low fat, easy meal that looks and tastes like you spent
hours in the kitchen. Serve this with rice pilaf or simple mashed
potatoes.
