                    Steamed Chicken with Lup Cheong

  7                    Dried black Chinese mushrooms
  1 1/2  ts            Sugar
  3      tb            Soy sauce
  2      tb            Water
  3                    Lup Cheong sausages --
                       - cut diagonally
  3      lb            Chicken breast halves -- boned,
                       - skinned, cut into 1" cubes
  1      tb            Hoisin sauce
  2      cl            Garlic -- minced
  1      tb            Bourbon or brandy
  1      tb            Green onions -- chopped
  1      tb            Fresh ginger -- minced
  1 1/2  tb            Corn starch
                       Garnish:
                       Green onions -- chopped

Soak mushrooms in warm water tor 20 minutes. Drain and remove tough
stems. Slice into strips. In a skillet, combine sugar, soy sauce and
water. Add sausages and simmer for 30 minutes. In a bowl, combine
remaining ingredients. Add simmered mixture and marinate for
1/2 hour. Steam, covered, for 1/2 hour or until done. Garnish.

I steam it in a 9" glass pie dish in a bamboo steamer over a wok,
laying a piece of wax paper over it.
