MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Capsicum Chicken Saute

     Yield: 4 Servings

     2 tb Vegetable oil
     1    Onion; sliced
     1    Green capsicum; cut Into
          -strips
     1    Red capsicum; cut Into
          -strips
     1    Zucchini; sliced
 1 1/2 c  Tomato puree
     1 tb Chopped fresh basil
     1 tb Chopped fresh parsley
     1 ts Chopped fresh thyme OR
   1/2 ts Dried thyme
   500 g  Boneless chicken breast
          -fillets; cut into strips
          Freshly ground black pepper

 Heat oil in a large frying pan and cook onion over a medium heat
 for 5 minutes or until soft. Add capsicum, zucchini and tomato
 puree. Bring to the boil, then reduce heat and simmer for 10
 minutes.

 Stir in basil, parsley, thyme and chicken. Cook for 10 minutes or
 until chicken is cooked. Season to taste with black pepper. Serve
 with new potatoes.
