MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Instant Pot Congee
Categories: Poultry, Rice, Vegetables, Herbs
     Yield: 4 Servings

     3 c  Roasted duck, chicken, or
          - turkey dark meat;
          - with some of the skin,
          - diced
     1 c  Jasmine rice; rinsed
 1 1/2 ts Salt; more to taste
   1/2 ts Ground white pepper;
          - more to taste
     2 c  Romaine; chopped (optional)

MMMMM----------------------TO GARNISH (OPT---------------------------
          Scallions; thin sliced
          Ginger; thin slivers
          Soy sauce
          Sesame oil
          Chile crisp

 In the pot of an electric pressure cooker, add roasted meat, rice,
 salt, pepper, and 6 cups water. Cover and cook either on the
 porridge setting or at high pressure for 30 minutes. Allow the
 pressure to release naturally.

 Unseal the pot and check the rice. If it isn't soft enough for your
 taste, cook on high pressure for another 2 minutes, then manually
 release the pressure.

 Uncover the pot and taste, adding more salt and pepper if needed.
 If it looks too thick, stir in some more water. Stir in romaine, if
 using, until it just starts to wilt. Sprinkle scallions over and
 serve with any of the other garnishes, if you like.
