Yield: 4 servings
1 lg Egg
1/2 c Panko bread crumbs
1/2 c Parmesan cheese; grated
1/2 ts Salt
1 ts Pepper
1 ts Garlic powder
4 Chicken breast halves
- (6 oz ea); boned, skinned

- spray
4 c Broccoli florets
1 c Marinara sauce
1 c Mozzarella cheese; shredded
1/4 c Fresh basil; minced (optional)
Set oven @ 400 F/205 C.
Lightly coat a 15x10x1" baking pan with cooking spray.
In a shallow bowl, whisk egg. In a separate shallow bowl, stir

layer along both sides of sheet pan (if broccoli is frozen, break
pieces apart). Return to oven; bake 10 minutes longer. Remove from
oven.
Preheat broiler. Spread marinara sauce over chicken; top with
shredded cheese. Broil chicken and broccoli 3 to 4" from heat until
cheese is golden brown and vegetables are tender, 3-5 minutes. If
desired, sprinkle with basil.
