  8                    whole chicken legs
  4      tablespoons   olive oil
  8      thin slices   mozzarella cheese
                       salt and pepper -- to taste
  2      cloves        garlic -- minced
  4      sprigs        fresh rosemary

On the inside of each leg, cut the meat to the bone along the entire length.
cut and scrape the meat free from the bone, but do not remove the skin. Brush
the sides of the boned chicken legs with oil, place a slice of cheese on the
meaty side, and sprinkle with with salt, pepper, garlic and rosemary. Wrap the
chicken, pulling the loose skin from the edges of the leg and tucking in the
meat to make a neat bundle. Tie each with string and brush with remaining
olive oil.

Grill the chicken, turning as needed, or bake in a 400 F oven for about 30
minutes.
