                       Light Orange Dijon Chicken

  1      tablespoon    vegetable oil
  8      teaspoons     soy sauce
  8      teaspoons     brown sugar -- firmly packed
  8      teaspoons     orange juice, frozen concentrate -- thawed
  8      teaspoons     Dijon mustard
  2                    boneless skinless chicken breasts
                       salt and pepper

Whisk together all marinade ingredients in a medium bowl or a large
ziplock plastic bag.  Place chicken in large bowl (or bag) with marinade
and cover.  Marinate in refrigerator at least 2 hours, turning several
times.  Remove chicken from marinade and discard leftover marinade.
Season chicken with salt and pepper.

Oil hot grid to help prevent sticking.  Grill chicken on a covered grill
over medium heat, 4 to 7 minutes for boneless thighs and 15 minutes for
bone in thighs, turning once or twice.  Chicken is done when meat is no
longer pink in center.
