Trim all visible fat from chicken breasts.
Heat a non-stick skillet over medium heat until hot. Away from the
heat, coat with cooking spray. Add breasts, onion, and garlic. Saute until
breasts are browned, about 8 minutes, turning once. Add seasonings and soy
sauce. Reduce heat; cover; cook until chicken is fork tender and no longer
pink, about 15-20 minutes.
Cut one lime in quarters; halve the other.
Place chicken on serving dish; top with the sauce from the pan;
sprinkle with juice from the halved lime (about 2 Tbsps). Serve with the
lime quarters.
