     Title: MOM-MOM'S SONIA'S CHICKEN

     Yield: 4 servings

     1    Chicken; cut into 8ths
     4 cl Garlic; peeled and sliced
     2 tb Olive oil
   1/2 c  Dry red wine
   1/2 ts Dry Basil
   1/2 ts Oregano
   1/2 ts Pepper; OR red pepper flakes
          -if you like hot
          Fresh parsley; for garnish

 1. Place chicken in a shallow baking pan.  Sprinkle
 with garlic slices all around (under as well) the
 chicken pieces.

 2. Pour the oil and wine over the chicken; then
 sprinkle the basil, oregano and pepper. Cover the pan
 tightly with foil.

 3. Bake for 45 minutes in a preheated 350 degree oven.
 Remove the foil and bake uncovered for an additional
 15 minutes.

 4. Garnish with parsley when you are ready to serve.
 Good with noodles or rice.

 NOTE:  My Mom worked and was not particularly a great
 cook, but what she did make she made well.  This is
 one of her favorites and I will teach Sara how to make
 it. She is my oldest granddaughter and is named for my
 Mom. Most of my Bubbe recipes are my Grandmother's.
 Her name was Elka.
