MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Cornmeal Oven-Fried Chicken

     Yield: 6 servings

   1/2 c  Dry bread crumbs
   1/2 c  Cornmeal
   1/3 c  Parmesan cheese; grated
   1/4 c  Fresh parsley; minced -OR-
     4 ts Dried parsley flakes
   3/4 ts Garlic powder
   1/2 ts Salt
   1/2 ts Onion powder
   1/2 ts Dried thyme
   1/2 ts Pepper
   1/2 c  Buttermilk
     4 lb Broiler/fryer chicken; cut
          - up, skinned
     1 tb Butter; melted

 In a large shallow dish, combine the first 9
 ingredients. Place the buttermilk in a shallow bowl. Dip
 chicken in buttermilk, then dip in bread crumb mixture,
 a few pieces at a time, and turn to coat.

 Place in a 13x9" baking pan coated with cooking
 spray. Bake @ 375 F/190 C for 10 minutes; drizzle with
 butter. Bake until juices run clear, 30-40 minutes
 longer.
