4 Chicken breasts (3 oz ea) --
- boneless, skinless
1 Can pineapple chunks -- drained,
- reserving juice
1 Green pepper -- cut in 1" pieces
1 Red pepper -- cut in 1" pieces
1/2 c Teriyaki sauce
2 tb Brown sugar
Cherry tomatoes or tomato chunks
Mix teriayaki sauce, and 1/4 cup of the reserved juice and brown
sugar together in a bowl.
Cut chicken breasts in chunks and add to marinade. Refrigerate for at
least 3 hours.
Thread chicken on skewer, alternating with pineapple, pepper, and
tomato. Zucchini or other vegetables may be added if desired. Grill
over medium coals 12 to 15 minutes, turning often and basting with
marinade.
