Chicken Adobo

2       pounds  chickens        cut in pieces
1       head    garlic  coarsely chopped
4       tablespoons     soy sauce       or to taste
1       teaspoon        black pepper
2       cups    water
1/2     cup     rice vinegar    or white vinegar
2               bay leaves
2       tablespoons     vegetable oil


Put vinegar, bay leaves, pepper, soy sauce & water in a saucepan.

Cover & cook slowly for about 15 minutes.

Meanwhile, heat the cooking oil in a large, heavy-bottomed frying pan.

Peel the cloves of garlic (yes, you will use an entire head!) and
brown them over medium-low heat, about 5 minutes.

Add the chicken to the frying pan & brown it over medium-high heat,
about 5 minutes.

Add the vinegar mixture to the frying pan & simnmer, partly covered,
for about 30 minutes or until the chicken is done.  Do NOT let it come
to a boil.

Remove the bay leaves.  Serve over cooked rice.

Notes: Adobo is the national dish of the Philippines.  Most warm
weather countries have developed recipes like this one which preserves
food while flavoring it.  This dish is different from many because of
it's strong component of vinegar.  It is at once sour, salty &
drenched in garlic.
