1 Chicken -- cut in serving size
1/2 lb Fresh mushrooms -- up to 3/4 lb
1 Green pepper -- sliced
1 Yellow onion -- sliced
1 c Orange juice
1/2 c Water
1/4 c White wine
2 tb Corn starch
1 tb Frozen orange juice concentrate

Orange peel -- grated
- (optional)
May use 3 large split chicken breasts in place of the chicken.
Lightly salt chicken and broil, skin side up, for 10 minutes. Slice
vegetables and spread in bottom of large baking dish. Combine orange
juice, water, and wine with corn starch, and cook over low heat until
sauce thickens. For a stronger orange flavor add 1 tb frozen orange
juice concentrate. Cover vegetables with chicken and top with sauce.
Bake 1 hour at 350 F, until chicken is tender. Sprinkle with grated
orange peel for extra flavor and garnish.
Barb's Notes:
I used chicken breast in place of the whole chicken, also I added
more mushrooms and onions and left out the green pepper (I don't like
bell peppers). It was delicious.
To vary this I added a little cayenne pepper to the chicken with the
salt and it added a very nice spicy touch to it. Like this very much.
May add a little salsa to the veggies next time to see how the sweet
and spicy flavor turns out.
