2 tb Butter
1 md Onion; finely chopped
2 cl Garlic; finely chopped
1 Bay leaf; crumbled
2 c Ketchup
6 oz Cola
1 tb Worcestershire sauce
1 ts Dry mustard
2 ts Cider vinegar
Salt
Freshly ground pepper
3 lb Chicken; cut up
Prep time: 10 minutes
Cook time: 2 1/4 hours
In a large non-aluminum saucepan, melt butter over low heat. Add
onion and garlic, and cook until onion is soft, about 5 minutes.
Add bay leaf, cola, ketchup, Worcestershire, mustard, vinegar, and
salt and pepper to taste. Simmer sauce 1 hour, stirring
occasionally.
Preheat oven to 350 F. Pour 1/2 cup sauce in bottom of a 13x9x2"
baking dish. Arrange chicken pieces skin side up in dish. Spoon
1/2 cup more sauce over chicken. Bake for 30 minutes. Turn
chicken, baste, and bake another 30 minutes.
Turn oven to broil. Spoon 1/2 remaining sauce over chicken. Broil
until crisp, about 4 minutes. Turn chicken over and spoon on
remaining sauce; broil until crisp.
