     Title: Pollo Rellenos
Categories: hot, main dish, poultry
     Yield: 4 servings

     4 ea chicken breast (boneless)
     1 c  chicken broth
   3/4 c  golden raisins
     1 sm onion; minced
   1/2 ts cinnamon
     1 pn cloves; ground
   1/2 tb salt
     1 ts chimaja
     1 tb red chile caribe
     1    chopped spinach

 Make a stuffing by mixing the golden raisins, minced onion, cloves,
 cinnamon, salt, chile, chimaja and chopped spinach.

 Stuff the chicken breasts, bake at 350 for 1 hour or until tender.

 Baste with broth a couple of times while baking.
