                            Curried Chicken

                       Spice Mixture:
  2      tb            Curry powder
  1      ts            Cumin
    3/4  ts            Salt
    1/4  ts            freshly ground pepper
  1      pn            Cloves
  2      tb            Water
  1      ts            Garlic -- minced
  1      ts            Tomato paste (optional)
                       Chicken
  1      tb            Vegetable oil
  2      c             Onions --- finely chopped
  8                    Chicken thighs (1-1/4 lb) --
                       - boneless, skinless, halved
  1                    Golden delicious apples --
                       - cored, cut in 1" pieces
  1      c             Carrots -- sliced 1/2"
    3/4  c             Chicken broth
  1      c             Frozen peas -- thawed
  1      c             Couscous or rice -- cooked

* Can also use kip filets. (skinless, boneless, chicken breast half)

Start cooking couscous or rice.

Combine first 8 ingredients in a small bowl. Stir until blended; set
aside.

Heat oil in Dutch oven over high heat. Add onions and cook, stirring
occasionally, until tender, 3 to 4 minutes. Add spice mixture; cook
until fragrant, 1 minute. Add chicken, apple, carrots, and broth.
Reduce heat and simmer, covered, stirring occasionally, until chicken
is cooked and vegetaables are tender 12 to 14 minutes. Stir in peas
and heat through.

Serve with cooked couscous or rice.

Yield: 4 Servings
