     Title: Spicy Roasted Sausage, Potatoes & Peppers

     Yield: 4 servings

     1 lb Potatoes; peeled;
          - in 1/2" dice
    12 oz Fully cooked andouille
          - sausage links;
          - in 1" pieces
     1 md Red onion; in wedges
     1 md Red bell pepper;
          - in 1" pieces
     1 md Bell pepper; in 1" pieces
   1/2 c  Pickled pepper rings
     1 tb Olive oil
     1 ts Creole seasoning
   1/4 ts Pepper

 Set oven @ 400 F/205 C.

 In a large bowl, combine potatoes, sausage, onion, red pepper,
 green pepper, and pepper rings. Mix oil, Creole seasoning and
 pepper; drizzle over potato mixture and toss to coat.

 Transfer to a 15x10x1" baking pan coated with cooking spray. Roast
 until vegetables are tender, stirring occasionally, 30-35 minutes.
