1 ts Oil
1/2 c Cheese, grated
200 g Ham, diced
1 Tomato, chopped
Salt
Freshly Ground Black Pepper
6 Eggs, beaten
1 tb Fresh Parsley, chopped
Heat an ovenproof frying pan over a low heat, add the oil & tilt
the pan to coat the bottom. Add the cheese, ham. tomato, salt &
pepper to the beaten eggs & stir in. Preheat the grill, pour the
egg mixture into the pan & cook for 5 minutes without stirring. To
finish cooking the top, place the frittata under the preheated
grill until the top is brown. Serve sprinkled with parsley.
