MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Lemon-Dijon Pork Sheet-Pan Supper

     Yield: 4 servings

     4 ts Dijon mustard
     2 ts Lemon zest; grated
     1 cl Garlic; minced
   1/2 ts Salt
     2 tb Oil
 1 1/2 lb Sweet potatoes; in 1/2"
          - dice
     1 lb Fresh Brussels sprouts;
          - quartered
     4    Boneless pork loin chops;
          - 6 oz ea
          Coarse ground pepper

 Set oven @ 425 F/218 C.

 In a large bowl, mix first 4 ingredients; gradually whisk in oil.
 Reserve 1 tb mixture. Add vegetables to remaining mixture; toss to
 coat.

 Place pork chops and vegetables in a 15x10x1" pan coated with cooking
 spray. Brush chops with reserved mustard mixture. Roast 10 minutes.

 Turn chops and stir vegetables; roast until vegetables are tender,
 10-15 minutes longer. If desired, sprinkle with pepper. Let stand 5
 minutes before serving.
