     Title: San Francisco Chops

     Yield: 4 Servings

     1 tb Oil
     4    Pork chops or spare ribs
     1    Clove garlic
     2 ts Oil
     4 tb Dry sherry or broth (OR dry
          -white wine)
     2 tb Brown sugar
     3 tb Soy sauce (I used ginger-
          -flavored soy) *
   1/4 ts Crushed red pepper
     2 ts Cornstarch
     2 tb Water

--------------------------GARNISH--------------------------
     1 bn Green onions; chopped
     1    Carrot; peeled lengthwise

 * The recipe called for 4 Tb soy sauce, but I found it
 too strong and would decrease it to 3 next time I make
 it.

 Trim fat from chops or ribs. Heat 1 Tb oil in skillet.
 Brown meat on both sides. Mix garlic, oil, sherry, soy
 sauce, brown sugar and red pepper. Pour over meat and
 cover tightly. Simmer 30-35 minutes. Add 1-2 Tb water
 if needed. Dissolve cornstarch in water. Add to pan
 and cook until thickened. Serve over parsley buttered
 noodles. My own addition to the recipe after I first
 tried it would be to add the chopped onions and curled
 carrot to the top of each portion as a garnish when
 served.
