MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Mini Meat Loaf Sheet-Pan Meal

     Yield: 6 servings

     2 lg Eggs; lightly beaten
     1 c  Tomato juice
   3/4 c  Quick-cooking oats
   1/4 c  Onion; finely chopped
   1/2 ts Salt
 1 1/2 lb Lean ground beef
   1/4 c  Ketchup
     3 tb Brown sugar
     1 ts Prepared mustard
   1/4 ts Ground nutmeg
     3 lg Potatoes; peeled. in 1/2"
          - dice
     3 tb Olive oil; divided
   1/2 ts Garlic salt; divided
   1/4 ts Pepper; divided
     1 lb Fresh asparagus; trimmed,
          - halved

 Set oven @ 425 F/218 C.

 In a large bowl, combine eggs, tomato juice, oats, onion, and salt.
 Add beef; mix lightly but thoroughly. Shape into six 4x2-1/2"
 loaves; place on a sheet pan or in a large shallow roasting pan.
 Combine ketchup, brown sugar, mustard, and nutmeg; brush over loaves.

 Combine potatoes with 2 tb oil, 1/4 ts garlic salt, and 1/8 ts
 pepper; toss to coat. Add to pan in a single layer. Bake loaves and
 potatoes 25 minutes.

 Combine asparagus with remaining 1 tb oil, 1/4 ts garlic salt, and
 1/8 ts pepper; toss to coat. Add to pan. Bake until vegetables are
 tender, 15-20 minutes. Let stand 5 minutes before serving.
