Title: My Meat Loaf

Yield: 4 Loaves
2 lb Ground beef
1/2 lb Ground pork
2 lg Eggs; lightly beaten
1 c Panko crumbs

2 tb Butter
3/4 c Onions; finely chopped
1/2 c Celery; finely chopped
1/2 c Bell pepper; finely chopped
1 ts Salt
1 ts Pepper
1 ts Garlic powder
1/2 ts Tabasco sauce
1 tb Worchestershire sauce
1/2 c Evaporated milk (or milk)
1/2 c Catsup
Melt butter in medium fry pan over medium heat. Add the veggies,
spices and saute until mixture starts sticking to pan, about
6 minutes, stirring occasionally and scraping the pan bottom well.
Stir in the milk and catsup, continue cooking for about 2 minutes.
Remove from heat and allow veggie mixture to cool to room
temperature.
Place gound beef and pork in large mixing bowl. Add the eggs and
the cooled cooked veggies. Stir in Panko bread crumbs. Combine
everything together until well mixed. Mixture will be moist - add
more panko if necessary.
Divide mixture into 4 equal portions, for each section into a loaf
and place in 4" loaf pan. Place pans on large baking sheet and
place in a preheated 350 degree F oven for 30 minutes. Drain any
fat from pan, return to oven - raise temperature to 400 F and bake
another 30 minutes.
When done, remove from pan and place on plate to cool before
freezing.
Makes 4 small loaves - each will feed two.
Can make one large loaf - follow directions above, cooking 1-1/2
hours.
