     Title: Possum Delux

     Yield: 1 Batch

 4 1/2 lb Possum; up to 6 lb
     2 c  Sherry
     4    Cloves
     3    Cinnamon sticks; up to 4
     3    Oranges; sliced
     1 bn Asparagus; tender; young
     1 c  Hollandaise sauce
   1/2 c  Cheddar cheese; grated

 Combine sherry, cloves, cinnamon, and orange slices and simmer
 15 minutes. Place possum in deep cooking pan, cover with marinating
 sauce, and let stand overnight. Cover and bake in sauce for about
 1 hour or until tender. Cook asparagus. Make Hollandaise sauce and
 add grated cheese. Serve possum with asparagus sauced with
 Hollandaise-Cheese sauce and fluffy rice as a side dish.
