     Title: Beaver Tail Soup

     Yield: 5 Servings

     2    Beaver tails; skinned, in
          - small pieces

MMMMM---------------------------BRINE--------------------------------
          Per quart of water:
     2 c  Vinegar
     2 tb Salt

MMMMM----------------------------SOUP---------------------------------
   1/4 ts Ground black pepper
 1 1/2 ts Salt
     1    Bay leaf
     2 cl Garlic; minced
     3 lg Carrots; in 1/4" rounds
     3    Celery ribs; sliced 1/4"
     2 sm Onions; quartered
     8 oz Egg noodles
    10 oz Box Frozen peas

 Skin and remove all fat from tails of 2 beavers; cut up tails in
 small pieces. Soak overnight in water with 2 c vinegar and 2 tb
 salt for each quart.

 Place meat in kettle with 4 quarts boiling water. Add pepper, salt,
 bay leaf, garlic, carrots, celery, and onions.

 When meat is almost tender, add egg noodles and peas.

 Simmer until done. Adjust seasoning with salt & pepper.
