                         Beef & Orange Burritos

  1      teaspoon      olive oil
  1      large         onion -- chopped
  1      large         green pepper -- chopped
  3      large         garlic cloves -- crushed
  1      tablespoon    orange rind -- grated
  2      teaspoons     ground cumin
  1      teaspoon      chili powder
    1/4  cup           orange juice
  1      large         lean ground beef -- cooked & drained

In a large skillet, saute onion, pepper, cloves, orange rind, cumin &
chili powder in oil (and Pam if needed) until almost tender.  Add orange
juice & stir until liquid evaporates.

Add cooked & drained ground beef & stir long enough until flavors have
blended together.

Serve with heated flour tortillas & your choice of the following
accompaniments:  chopped tomatoes, shredded lettuce, grated sharp cheddar
cheese, sour cream, chopped scallions, salsa, refried beans, tabasco
sauce, sliced jalapenos.
