                        Mexican-Meatball Tidbits

  1                    Egg
    1/2  c             Water
    1/2  ts            Salt
  1 3/4  oz            Env chili mix
    1/2  c             Corn meal or
                       - fine dry breadcrumbs
  1 1/2  lb            Ground beef
  2      c             Tomato juice
  1      tb            Lemon juice

Combine egg, water, salt, and 2 tb from package of chili seasoning;
mix lightly. Add corn meal and ground beef. Shape into small
meatballs. Arrange on ungreased shallow baking sheet. Bake in 450 F
oven 10 to 15 minutes, until done. Combine in large skillet or
chafing dish remaining chili mix, tomato juice, and lemon juice. Add
meatballs; heat to simmering. Keep warm. Serve with wooden picks.
