                         Brookfield's Meatloaf

  2      pounds        ground beef
  3 1/2  ounces        grated monterey jack cheese
  2                    eggs
  1                    onion -- diced small
  1      small         green bell pepper -- diced small
  5      slices        sourdough bread
  1      cup           milk
  1 1/2  teaspoons     A-1(R) Steak Sauce
  1 1/2  teaspoons     Worcestershire sauce
  1 1/2  teaspoons     garlic salt
    1/2  teaspoon      Tabasco(R) sauce
    1/2  teaspoon      ground white pepper
  1      tablespoon    beef base
                       favorite prepared chili sauce -- for topping

Soak the sourdough bread in milk.  Add all the seasoning and spices
(including beef base, A-1, Worcestershire and Tabasco).  Mix the ground beef
with jack cheese, onion, bell pepper and egg.  Add the bread and milk to
beat mixture and mix together thoroughly.  Form into a loaf and place in a
glass or metal baking pan.  Pour chili sauce over the top.  Cook, covered
with foil, for approximately 90 minutes at 350  F.
