2 lb Ground beef
1 md Onion -- finely chopped
1/2 ts Garlic powder
8 oz Tomato sauce
2 c Canned diced tomatoes
1 1/2 oz Taco seasoning mix
1/2 ts Salt
1/4 ts Pepper
1 tb Chili powder
14 oz Pkg corn tortillas
10 1/2 oz Can cream of chicken soup
3/4 c Milk
8 oz Cheddar cheese -- shredded
Combine beef, onion, and garlic powder in large skillet. Cook over
medium heat until meat is browned, stirring to crumble. Drain well.
Add next seven ingredients, cook 5 minutes, stirring occasionally.
Tear each tortilla into 8 pieces. Place half of tortilla pieces in a
9x13" pan, top with meat mixture. Arrange remaining tortilla pieces
evenly over meat mixture. Combine soup and milk in a small bowl,
mixing well. Pour over tortillas. Sprinkle cheese evenly over top.
Bake at 350 F for 45 minutes. I made this and layered in five small
loaf pans. The original recipe said it made 6 servings, but I thought
more like 10. It would easily make two square foil pans to feed four
people each (generously). I did not bake before freezing. I served
with corn and a green salad. True, the corn tortillas did get a bit
mushy, but the flavor was good and reminded me of "real" tamales.
