Title: Shepherd's Pie Ala Phillyboyjay

Yield: 1 Pie
2 lb Ground beef
6 md Russet potatoes; up to 7
1 sm Onion; chopped
1 c Frozen peas & carrots;
- up to 1-1/2 c
4 tb Butter
3 tb All-purpose flour
2 c Water
1/2 c Whole milk
1/4 c Parmesan cheese; grated
1/4 c Philadelphia cream cheese
3 tb Ketchup; up to 4 tb
2 ts Worcestershire sauce
1 Beef bouillon cube
1 ts Garlic; minced
2 ts Salt
2 ts Black pepper
1 1/2 ts Paprika
1 ts Sugar
1/2 ts Thyme
1/2 ts Parsley flakes
Place a pan over high heat and add ground beef.
Chop up onion and add to pan once ground beef browns.
Add the ketchup, worcestershire sauce, bouillon cube, minced garlic,
1 ts salt, 1 ts black pepper, 1 ts paprika, and thyme. Stir in well.
Combine water and flour. Stir until flour dissolves.
Then add slurry to pan of ground beef.
Reduce heat to medium heat and allow meat to simmer until juice turns
into a thick gravy.
Once gravy thickens, remove meat and gravy from pan and place in a
baking pan.
Add the peas and carrots to the meat and stir in until well blended.
Peel the potatoes.
Slice and dice them into small even size shapes.
Place a pot of water over high heat. Once water comes to a boil add
potatoes, cook for 20 minutes, then drain water.
Place the potatoes back in the pot and place pot over high heat. Mash
potatoes and make sure potatoes are on the dry side before adding the
ingredients. Then add your milk, cream cheese, margarine or butter
and stir in well. Then add the graded parmesan cheese, egg yolk,
sugar, the remaining salt and pepper then stir in again.
Place the potatoes over the ground beef and vegetables.
Smooth potatoes out with a fork.
For decoration purposes, garnish with 1/2 ts paprika and parsley
flakes.
Bake on 400 F (205 C) for about 30 minutes.
