1 Pie shell -- 9 inch
Oil to saute
2 Tomatoes -- skinned and sliced
2 teaspoons Basil
1/2 cup Milk
1 Onion -- sliced
1 1/2 cups Cheese -- grated
2 tablespoons Flour
3 Eggs -- beaten
Salt to taste
Make pie shell by preferred recipe. Bake in preheated oven (400
degrees F) for 8 minutes. Meanmwhile, saute onion in oil until
soft--not brown. Put 1 cup of cheese in bottom of pie shell. Top with
onions. Sprinkle tomato slices with flour and basil and saute 1
minute on each side. Arrange atop onions. Combine eggs and milk and
pour over tomatoes. Salt to taste. Sprinkle remaining 1/2 cup cheese
on top. Bake for 10 minutes at 400 degrees F, then 15-20 minutes at
350 degrees F. Serve warm.
