1/2 c Yellow onion -- chopped
1 tb Parsley -- chopped
1/2 c Green onion -- chopped
1/2 lb Mushrooms -- sliced
1 Polish sausage -- ground up
4 Eggs
1 c Whipping cream
1 ts Lawry seasoned salt
1 c Swiss cheese -- grated
Preheat oven to 375 F. Saute first 4 ingredients lightly (add
mushrooms to pan last) in 2 tb of butter. Turn off heat and mix in
sausage, then set aside. Beat eggs, cream and seasonings together.
Mix all ingredients together, stirring in cheese. Pour into a 9" pie
shell and brush shell edges with beaten egg white. Bake for 40 to
45 minutes. Cool 15 minutes before serving. You may substitute 1 cup
chopped ham for the sausage.
