3 Eggs
1 c Heavy cream
1/3 c Chablis
1 ds Nutmeg
Salt
Freshly ground pepper
1 c Swiss cheese -- grated
Variation 1:

4 sl Bacon -- up to 5 sl,
- cooked crisp, crumbled
Variation 3:
1/2 c Crab meat -- shredded -OR-
1/2 c Shrimp -- finely diced
Variation 4:
1 c Onion -- thinly sliced -OR-
1 c Leek -- sliced,
- white part only
Variation 5:
3/4 c Mushrooms -- thinly sliced
Line a 9" pie plate with pastry, or use a frozen pie crust, and rub
some soft butter over the surface. Partially bake the crust in a
425 F oven for 8 minutes. Let cool until ready to use. Combine the
eggs, cream, wine, nutmeg, salt, and pepper to taste in a bowl and
beat until blended. Gradually add the cheese, and blend well with the
egg mixture. Pour into the pie crust, and bake in a 375 F oven for 20
to 30 minutes, or until a knife inserted in the center comes out
clean. If the top is not golden brown, run under a broiler until
browned. Allow to stand for 5 minutes before cutting. Serve with a
crisp green salad, and chilled Chablis or Pinot Chardonnay.
Variation 1:
Line the bottom of the crust with overlapping pieces of thin ham
(Proscuitto, Smithfield, Country, or boiled), and pour in egg
mixture, OR as you pour in egg mixture dot with pieces of ham.
Variation 2:
Fold bacon into the egg mixture.
Variation 3:
Add shredded crab or diced shrimp to egg mixture, or placed on the
bottom of the pastry shell.
Variation 4:
Place onion or leek in a layer on bottom of crust.
Variation 5:
Arrange mushrooms over the bottom of the pastry shell, OR fold into
the egg mixture.
