4 oz Fresh spinach -- rinsed well,
- chopped
1 c Swiss cheese -- shredded
1/2 c Monterey Jack cheese -- shredded
1/2 c Cottage cheese
1 1/4 ts Dried minced onion
1 tb Olive oil
1/2 ts Basil
1/2 ts Savory
1/2 ts Pepper
1/4 ts Garlic salt
4 Eggs
1/2 c Evaporated milk (use skim
- evaporated milk)
1 Pie crust
Blend cheeses, onion, oil, and seasonings until smooth. Add eggs,
milk, and spinach. Pour into prebaked (according to directions on
box) pie crust shell. Bake at 375 F for 35 to 40 minutes. Cool for 10
to 15 minutes.
