MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Popeye Pie

     Yield: 6 Servings

    10 oz Fresh spinach
     2 lg Eggs; well beaten
     1 c  Milk;
   1/3 c  Celery; chopped
   1/4 c  Onion; chopped
     2 tb Parmesan cheese; grated
   1/2 ts Salt
   1/2 ts Nutmeg

 Wash spinach and discard stems. Steam in a covered sauce
 pan over low heat until the leaves are wilted. Drain in
 a colander or sieve, press out liquid and chop spinach.

 Mix remaining ingredients together, then fold in spinach.
 Pour mixture into a well greased 9" pie plate. Set oven
 to 375 F/190 C. Bake for 45 minutes or until a knife
 inserted in the middle comes out clean.

 Cut into 6 wedges and serve warm.

 Per serving: 71 calories, 1 protein, 1/2 fruit & vegetable
 5 g carbs, 6 g protein, 3 g fat
