1 c Dried split green peas
3 lb Lamb shanks
1 lg Onion -- chopped
2 Carrots -- peeled and sliced
2 Celery ribs -- sliced
2 1/2 c Beef broth
Salt and pepper
Completely soften peas by your favorite method. Brown lamb shanks
under broiler to remove fat; drain well. Mix all ingredients except
shanks in Crock-Pot; stir well. Add shanks, pushing down into liquid.
Cover and cook on Low for 10 to 12 hours.
