                              Chili Squash

  4      c             Yellow squash
                       Water
  2      c             Onion -- chopped
  2                    Green chilies -- chopped
  1      tb            Oil
  4      oz            Cheddar cheese -- grated
 24                    Crackers -- crushed

Cook squash in water; drain and set aside.  Saute onion and chilies
in oil until tender.  In a 1 1/2-quart casserole dish alternate
layers of onions, squash and cheese.  Top with cracker crumbs.  Bake
at 350 degrees F for about 30 minutes until bubbly throughout.
