     Title: Mexican Pepper Casserole

MMMMM--------------------------FILLING-------------------------------
     2 tb Butter
     2 tb Olive oil
 1 1/2 c  Onion; thinly sliced
     3 cl Garlic; crushed
     1 ts Salt
     1 ts Cumin
     1 ts Coriander
     6 md Bell peppers; red & green
     2 tb Flour

MMMMM---------------------------CHEESE--------------------------------
   1/2 lb Medium-sharp cheddar;
          -thinly-sliced

MMMMM--------------------------CUSTARD-------------------------------
     4 lg Eggs
 1 1/2 c  Sour cream; can use part
          -yogurt
          Paprika; for garnish

 Preparation time: 1-1/2 to 2 hours

 Spicy sauteed peppers, layered with cheese, topped with a sour cream
 custard. And it's easy to make.

 Preheat oven to 375 F.

 Slice the peppers into thin strips. Heat butter and olive oil
 together in a heavy skillet. Saute onions and garlic with salt and
 spices. When onions are translucent, add peppers. Saute over low
 heat for about 10 minutes. Sprinkle in the flour. Mix well and saute
 until there is no extra liquid.

 Beat together the custard ingredients.

 Butter a deep casserole dish. Spread in half the saute, topped with
 half the sliced cheese. Repeat these layers. Pour custard over &
 sprinkle with paprika. Bake 40-45 minutes. Uncover for the last
      15    minutes.
