     Title: Bulgarian Pepper And Cheese Delights

     4 c  Green peppers; minced
 1 1/2 c  Mushrooms; sliced
 1 1/2 c  Onions; chopped
     2 tb Butter; up to 3 tb

MMMMM-------------------------SEASONINGS------------------------------
 1 1/2 tb Tamari
 1 1/2 tb Sherry
     1 ts Marjoram
   1/2 ts Salt; (to taste); up to 1 ts
          Black pepper to taste

MMMMM--------------------------BULGHAR-------------------------------
 1 1/2 c  Raw bulghar; soaked in
 1 1/2 c  Water; boiling
 1 1/2 c  Cottage cheese
   3/4 c  Feta cheese
     4    Eggs; beaten & lightly
          -salted
          Paprika

 Preparation time 1 1/2 hours, including baking

 Soak the bulghar for at least 15 minutes. It will still be crunchy,
 but this soaking will allow it to absorb liquid from the other
 ingredients.

 Saute onions in butter until translucent. Add peppers and mushrooms.
 Continue to cook until peppers are just becoming tender. Remove from
 heat.

 Add all of the seasoning ingredients to sauteed vegetables and mix
 well.

 Crumble the feta cheese and combine with the cottage cheese.

 Butter a 2 qt casserole dish or a 9x13" baking pan. Spread in
 bulghar, and cover it with a layer of vegetables. Add the mixed
 cheeses, and spread them around as evenly as possible. Pour the
 beaten eggs over everything and dust with paprika.

 Bake in 350 F oven for 40-45 minutes, uncovered. Let stand for 10
 minutes before serving.
